Naked cake: ideas for models and flavors for parties with rustic decor

O naked cake (pelled cake, in free translation from English) is a growing trend for weddings, especially for events with rustic decor.

The clean and natural look made this style of cake a favorite of brides. The generous apparent filling serves to further whet the guests’ appetite.

“A good portion of Brazilians do not appreciate the taste of fondant. The bride and groom end up investing a high amount in decorated cakes and, many times, the frosting is left over on the guests’ plates”, recalls pastry chef Mariana Gouvêa. In view of this, many grooms have opted for the “naked” version of the wedding cake.

“A good naked cake has to make the guest’s mouth water. The cake layers must be cut perfectly to be completely aligned and the filling must be creamy and clearly visible”, explains the pastry chef.

When you think of a naked cake, the mix of red fruits comes to mind. Strawberries, cherries, blueberries, blackberries, currants and raspberries are spread across the layers of the cake and covered with a thin layer of icing sugar.

Natural flowers also render a beautiful look to the cake. It is worth using roses, lavender branches, daisies or other flowers that match the visual identity of the party. “You can also decorate the naked cake with sugar flowers. They are identical to the natural ones, but can be consumed”, suggests Mariana.

“Vanilla dough with brigadeiro or beijinho filling are the brides’ favorite bets, but there are other options. I usually make a lot of cakes with dough with pieces of nuts and a dulce de leche filling. The cake with three brigadeiros – black, white and bicho de pé – also pleases, both for its look and taste”, said Mariana.

Whichever flavor the bride and groom choose, the filling must be firm in consistency. “If the cream is too liquid, it will dampen the dough and leave the cake soggy”, explains the pastry chef.
