Jolly Pizzeria: wheat-free pizzas –

When I was invited to meet the jolly pizzeria, a house that does not use wheat flour in its pasta, what the advisor told me was the following: “It is a house for everyone. A lot of people think it’s only for celiacs when we talk about not using wheat, but that’s not the case”. And she’s absolutely right. I, for example, do not have any dietary restrictions with wheat but it is a fact that I feel lighter when I look for alternatives to it.

Pizza in itself is a food that, although I love it, always makes me heavy, so I decided to try the option.

Opened at the end of 2020, in Jardim Paulista, the jolly pizzeriabrings a new concept in the category. The house that excluded the traditional wheat flour from the menu, bets on noble substitutions (based on flours rich in antioxidants, such as sweet potato flour, cassava flour, pea flour and brown rice flour), which in addition to generating lightness , provides a much wider variety of good nutrients in a single product.

In this way, the house developed a special mix for its flour, with selected raw materials. From starters to pizzas, pastas and desserts, they are developed with this blend of fine flours that bring lightness to the entire line.

MENU FOR EVERYONE

I arrived at the pizzeria with my lactase in my bag — I don’t give up eating a dairy product from time to time, but I don’t digest these foods very well, so before eating cheese, I have to eat a lactase tablet.

To my pleasant surprise, I didn’t have to use it because I saw right away on the menu that, for any flavor, you can select a traditional cheese option, lactose-free or even vegan, perfect for those with restrictions but also for those who don’t have any.

As for pasta, you can also select (for any flavor) the low carb option.certified by ABLC – Brazilian Low Carb Association. This option is based on oilseeds, such as coconut milk, zucchini and eggs. Those who choose this pasta have an increase of R$ 15.00. There is also an egg-free pasta option for vegans.

To whet your appetite, I opted for pepperoni bruschetta which, to my surprise, actually “falls” much lighter in the stomach — I confess that I did not expect this, having opted for a “heavier” choice on the menu. I can say that the bruschetta is not only extremely delicious, but also does not take away the appetite for the main course, as it is much lighter than a traditional option.

Other options are creamy burratawhich accompanies crostini seasoned with herbs and truffled black garlic jam (all homemade) or the basil and tomato pesto version (BRL 44.00 and BRL 46.00). There is also thes provolines: with a low carb footprint, they are thin slices of provolone roasted with Provence herb (BRL 22.00, the portion).

My choice was for the delicious half pepperoni half dry tomato with arugula, with traditional homemade pasta and lactose-free cheese. The prices range from R$ 72.00 to R$ 149.00, in size (L).

The feeling when you finish is that you are satiated — I even had to wrap pieces to go as I couldn’t stand to finish everything — but without that heavy discomfort in the stomach. Approved!

In the line of special pizzas, pay attention to the versions Alcaponewith an accentuated flavor, mozzarella, catupiry, cheddar, pepperoni, pepperoni and handmade smoked bacon and shrimp with truffles, based on Swiss cheese, Paris mushrooms, black truffle and shrimp. Still in the footsteps of authors, stands out the frenchwith mozzarella, Paris mushrooms, tomato, parsley and ham, the Filet with barbecue sauce, with mozzarella, filet strips and house-made bourbon-based barbecue, The Pizza Sausage BlumenauThe mushroom pizza and the soft one salmon carpaccio pizza.

The drinks are a star apart to accompany the already delicious pizzas. Despite the various authorial drinks, I opted for the classics Bloody Mary It is Moscow Mule and both fall under the best I’ve ever taken in the category. It may seem exaggerated but I am not alone in this opinion. As the owner of the house told me, Leandro Capeleven a renowned international journalist specializing in Moscow Mules has claimed it to be the best she’s ever had all around the world.

For those who want to opt for something authorial and different, the drink that bears the name of the house, Jolly, brings Bombay gin, kombucha, thyme, crambery juice and pink pepper with a functional touch (R$ 35.00).

The biggest attraction is Baked Alaskathe option I chose, with vanilla dough, vanilla ice cream and Italian meringue flambéed with rum, torched when it arrives at the table (R$ 25.00) — an explosion of flavor.

Other options are entitled Maria’salmond-based dough and handmade mascarpone filling with port wine reduction and pineapple cream (R$ 29.00), the nostalgic Chocolateserved with two scoops of ice cream, hot chocolate sauce and crunchy farofa (R$ 24.00) and the classic Browniemade with hazelnuts, chestnuts, walnuts, is served with Italian ice cream (R$ 26.00), with a vegan option.

Safety during the pandemic

As the house opened amid the pandemic, some precautions such as the elegant screens that separate the tables from each other were provided.

There is alcohol gel in every month, in addition to sensors for using the sinks in the bathrooms, soap and absorbent paper.

Even with all the precautions taken, the number of people allowed on site was reduced by half, providing more spacing between tables.

In addition, all employees wear a mask at all times — even the chef, in the kitchen, which is possible to say with certainty, as it is visible for anyone who wants to check.
