It is believed that the name Kombucha originated from the doctor’s name. Kombucha is a Japanese term for slightly fermented tea,” explains nutritionist Giovanna Oliveira.

But despite the reports of its benefits and its history, scientifically, nothing is proven. “There is no conclusive study in the literature that speaks of the benefits of kombucha for humans. However, studies done in rats and other animals such as dogs, ducks, rabbits and chickens report a series of anti-inflammatory and antimicrobial properties, improving gastrointestinal functions. As these studies started in animals, there is nothing conclusive for humans specifically for kombucha tea, but when we see all these functions taking place in animals, it is very likely that this will be repeated for humans”, explains Lícia D’Ávila, nutritionist.

How to make kombucha at home

And how to make Kombucha? Nurture Giovanna Oliveira gives the recipe:

Ingredients:

300g of green or black tea leaves 400ml of water 5 tablespoons of brown sugar 1 unit of Scoby 300ml of kombucha 1 cup of jabuticaba 200ml of water 4 tablespoons of brown sugar

Method of preparation:

To prepare the tea: Boil the 400ml of water, turn off the heat, add the tea leaves, cover and let it rest for 10 to 15 minutes. Strain, add the sugar, 600ml of water, the Scoby and 300ml of your whey. Pour the mixture into a glass jar or bottle, cover with a paper towel or voile cloth, secure the mouth of the jar with an elastic band and let it rest for 1 week for your Scoby to multiply. After 1 week, save each of the puppies, with 200ml of their own water and distribute to their friends.

To flavor your drink: Boil the jabuticaba with 200ml of water and 4 tablespoons of sugar for 20 minutes. Pass through a sieve and let cool. Mix 300ml of fermented kombucha serum with 100ml of jabuticaba juice and cover. Let it rest for 3 days in a cool place and away from the sun to ferment, opening it once a day so it doesn’t burst.
