1. Tortillas
Ingredients
- 250 g of wheat flour
- 1/3 tablespoon of salt
- 1/2 cup of warm water
- 2 and ½ tablespoons of vegetable oil
Preparation mode
- In a bowl add the flour and salt;
- Add warm water and vegetable oil;
- Mix with a spoon, with circular movements in the center of the bowl;
- When you can no longer mix with the spoon, use your hands;
- Knead gently until it no longer sticks to your hands;
- Form a ball and cover the dough with a damp cloth;
- Let it rest for 30 to 60 minutes;
- Remove the dough from the bowl and place it on a bench;
- Divide the dough into 8 pieces, like a pizza;
- Form a ball with each part;
- Let it rest for 15 to 30 minutes;
- Knead the ball until you get a disk and stretch it out with a rolling pin;
- The discs must be very thin;
- Place the dough on a frying pan and wait for it to be full of bubbles;
- Turn over and repeat the process on the other side;
- Place on a smooth surface, spray with water and cover with a damp cloth;
- Repeat the process with all disks;
- Add the stuffing of your choice and roll the dough;

2. Guacamole
Ingredients
- 2 tomatoes
- 1 onion
- 1/2 bunch of coriander
- 1 avocado
- olive oil to taste

- Also chop the coriander;

- Chili pepper to taste
- 2 tablespoons of sugar
- salt to taste
- 1 can of peeled tomato
- 1 cup of water
- 2 cups cooked black beans without the broth
Preparation mode
- Cut the garlic, onion and pepper;
- In a frying pan, put the vegetable oil and take it to the high heat;
- When the oil heats up, add the cumin;
- Once browned, add the ground beef;
- Add the soy sauce;
- Then add the onion, pepper and garlic;
- Season with pepper, sugar and salt;
- Place the crushed peeled tomato over the meat;
- Add the water and let it cook for about 15 minutes;
- Add the beans and wait about 6 minutes;
- Turn off the heat and place in a suitable container to go in the oven;
- Put the cheddar on top and take it to the oven for fixings;

5. Chili with cheddar
Ingredients
- 1 cup diced bacon
- olive oil to taste
- 1 chopped onion
- 2 minced garlic cloves
- 450 g of minced meat
- 1 chopped smoked pepperoni sausage

- 1 can of tomato sauce
- 1 chopped tomato
- 4 cups of cooked kidney beans without the broth
- 1/2 chopped chili pepper
- salt to taste
- chives to taste
- 1 package cheddar cheese sandwich
- 1/4 cup of water
Preparation mode
- Put some oil in a pan and wait for it to heat up;
- Brown the bacon and set aside;
- In the same pan, sauté the onion, pepper and garlic;
- Add the ground beef and sausage;
- Season with salt;
- Let it cook for 5 minutes;
- Add the tomato, beans and tomato sauce;
- When the sauce is well mixed, add the pepper, bacon and chives;
- Mix lightly and place in a refractory;
- In another pan, add a finger of water and the cheese on top;
- Stir until you get a sauce;

6. Vegan Chilli
Ingredients
- 1 cup of red beans
- Water to cover the beans
- 1/2 cup of black beans
- 1 cup bean cooking water
- olive oil to taste
- 2 cups chopped onion
- 4 minced garlic cloves
- 1 cup chopped carrots
- 1 cup chopped red and yellow peppers
- salt to taste
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon smoked paprika
- 1 tablespoon dehydrated oregano
- 1 cup of tomato paste
- 1 pinch of sugar
- 1 bay leaf
- 3 tablespoons of mustard
- 1 cup chopped chives
- Black pepper to taste
Preparation mode
- Place the red beans in a bowl of water and soak for 12 hours;
- Do the same with the black beans;
- Drain the water and cook the beans until they are soft;
- Separate half of the red beans;
- Put the rest in the blender, beat with the cooking water for 1 minute and set aside;
- In a pan, put the oil and sauté the onion and garlic;
- Add the carrots, peppers and sauté for 2 minutes;
- Season with salt, paprika and oregano;
- Sauté for another 1 minute and add the red beans separated in step 4 and the black beans;
- Add the tomato paste, sugar, bay leaf and beaten beans;
- Mix and cook for 15 minutes on low heat;
- Finish with mustard, chives, pepper and serve.
7. Fajitas
Ingredients
- oil to taste
- bacon to taste
- 150 g smoked pepperoni sausage
- 200 g beef, cut into strips or cubes
- 200 g chicken breast, cut into strips or cubes
- 1/2 red pepper in strips
- 1/2 yellow pepper in strips
- 1/2 green pepper in strips
- 1 onion cut into petals
- 1/2 tablespoon cumin
- 1 teaspoon sweet paprika
- 1/2 teaspoon hot paprika
- 1 coffee spoon of chili pepper
- 1 tablespoon of brown sugar
- 1 tablespoon garlic powder
- 3 tablespoons of coriander
- salt to taste
- 200 ml of water
Preparation mode
- Heat a frying pan and add a little oil;
- Saute bacon and pepperoni;
- Remove from pan and set aside;
- In the same pan, sauté the meat and set aside;
- Repeat the previous step with the chicken;
- Put a little more oil in the pan;
- Add the peppers and sauté;
- Add the onion and wait for it to brown;
- Add the meats and season with lemon;
- Add the other seasonings;
- Add a little water and sauté everything until the water dries up;

8. Enchiladas
Ingredients
- 5 chicken breast fillets
- salt to taste
- Black pepper to taste
- 1 tablespoon sweet or smoked paprika
- 1 coffee spoon of chili pepper
- 1 coffee spoon of cayenne pepper
- 1 coffee spoon of oregano
- 1 teaspoon cumin
- Wheat tortillas to taste
- 1 can of tomato paste
- 2 tablespoons of barbecue
- grated cheese to taste
Preparation mode
- Season the chicken fillets with salt and pepper;
- In a bowl, mix the paprika, peppers, oregano and cumin;
- Sprinkle some of the seasoning mixture over the chicken fillets;
- Leave the fillets in the fridge for about 30 minutes, for the meat to get the seasoning;
- Grill the chicken fillets and cut into small strips;
- Meanwhile, bathe the tortillas in oil at 180°C for 10 seconds;
- Place the tortillas in a form and set aside;
- In a pan, place the tomato paste, the barbecue and add 1 teaspoon of the seasoning mix from step 2;
- When the sauce thickens, pass it inside the tortillas, fill with the chicken and roll up;
- Place in a refractory and spread more sauce on top;
- Repeat the previous two steps until you run out of stuffing;
- Sprinkle grated cheese on top;
- Take it to the oven at 180ºC for fixings and help yourself to this wonderful option of Mexican food.
9. Mexican burritos
Ingredients
- 500 g of bacon
- 1 kg of minced meat
- 4 cloves of garlic
- 2 chopped onions
- 1 grated carrot
- 2 chopped chili peppers
- 2 chopped tomatoes
- Black pepper to taste
- 3 teaspoons of salt
- 1 kg of bean paste
- 1/2 bunch of parsley
- 30 tortillas
- 30 cherry tomatoes
- 600 g of mozzarella
- 300 g of cabbage
Preparation mode
- In a heavy-bottomed skillet, place all the bacon;
- Turn on the fire and brown the bacon;
- Add the minced meat and sauté;
- When it is well sautéed, add the crushed garlic;
- Then add the onions, carrots, peppers and tomatoes;
- Season with pepper and salt;
- Add the bean paste;
- Finish the stuffing with parsley;
- Take the tortillas and fill them with mozzarella cheese, 1 tablespoon of the filling, 1 cherry tomato cut into four parts and grated cabbage;
- Fold the sides over the filling and roll up like an enchilada;
- It will look like a bundle;
- Repeat the process with all the tortillas;
- Heat in the microwave and serve the Mexican food.
10. Mexican palettes
Ingredients
- 1 box of clean strawberries
- 1 tablespoon icing sugar
- 1 lemon juice
- 4 disposable cups of 180 ml
- 32 disposable cups of 50 ml
- Paper movie
- 1 can of condensed milk
- 4 disposable popsicle sticks
Preparation mode
- In a blender, beat the strawberries, sugar and lemon juice;
- Fill 1/3 of the 180 ml disposable cups with this mixture;
- Store leftovers in the fridge;
- Take the 50 ml cups and make stacks of 8 cups;
- Place each stack in the center of the larger glasses, where the strawberry juice is located;
- Press the stack of cups until it approaches the bottom of the larger cup;
- Cover with cling film to keep the cups fixed;
- Place in the freezer for 1 hour;
- After an hour, remove the cups from the larger cups;
- Fill the space with condensed milk, leaving about 1 finger free;
- Finish with the strawberry juice, up to the rim of the glasses;
- Insert the toothpick in the center of the ice cream;
- Leave in the freezer overnight;
- Unmold the palettes and enjoy Mexican food!
