Ingredients

  • 1 ½ cups of dried peas;
  • Water;
  • Oil;
  • 3 cloves of garlic;
  • ½ medium onion;
  • 4 cups of vegetable broth;
  • 1 bay leaf;
  • ½ cup chopped parsley and chives;
  • Salt to taste;
  • Olive oil to taste.

Step by step

  1. In a container, add the dried peas, cover with water and leave to soak for 12 hours;
  2. After this time, drain the liquid, wash the peas and reserve for later use;
  3. Place a pressure cooker over medium heat and add a drizzle of oil, the chopped garlic and onion and let it brown;
  4. Add the peas and sauté for about 3 minutes;
  5. Season with a bay leaf, salt to taste and add the vegetable broth;
  6. Then, lower the heat, cover the pressure cooker and let it cook for about 15 minutes;
  7. When the peas are cooked, add the parsley and chives, a drizzle of olive oil and mix everything together.

To make it even tastier, pea soup can be served with crispy toast.
