Created in 2017 in the city of Santos, Gelateria Mare di Sapore left the coast of São Paulo towards the capital of São Paulo, settling in a charming colorful townhouse in the Pinheiros neighborhood. With over four years of operation and great success in the city of Santos, the chefs decided it was time to expand and brought the gelateria to São Paulo.

With a backyard, hammock and fruit trees, Gelateria Mare di Sapore provides a unique experience for those who enter the new headquarters.

DIFFERENT FLAVORS AND PREPARATION

In addition to the classic flavors that are mandatory in any gelateria, the real stars of the menu are the typical fruits from various regions of the country, which become irresistible sorbets. Grumixama, uvaia, butiá, cambuci, cupuaçu, cagaita, taperebá and cabeludinha share space with vanilla gelato from Cerrado and tapioca with coconut milk.

The great differential of Mare di Sapore gelato is the way it is prepared. The coffee, for example, is made from the infusion of the beans, resulting in a white mass, with a strong flavor of the grain and without bitterness. The pumpkin gelato is prepared from the sweet root, also made in the laboratory installed at the back of the house. There are always 12 options on display, respecting the seasonality of the ingredients, all natural and without dyes, flavors or preservatives.

PRICES AND SIZES

The gelato is served in handmade cones (up to two flavors R$18.90) or in biodegradable cups available in three sizes: Small 100g (one flavor R$14), Medium 120g (up to two flavors R$16) and Large 150g (up to two flavors R$18). For those who want to take it home, Mare offers three packaging options for the trip: one flavor – 150ml (from R$18), one flavor – 500 ml (from R$48.60) or two flavors – ½ kilo (from BRL 56.60). In addition to gelato, the menu suggests milkshakes (or shakes, in the case of vegan combinations, with coconut water), coffee, cachaça and craft beers.

UNUSUAL FOODS

Mare di Sapore lives not only on gelato. Chefs Lena and Alexandra also present a lean and tasty menu with dishes to warm up, with the mocotó broth (R$20) served with pepper gelato, house salad (R$24) with basil gelato and balsamic reduction, couscous northeastern with meat and confit tomatoes, accompanied by cheese gelato (R$27.60) and vegan couscous with a mix of mushrooms, confit tomatoes and beetroot gelato (R$27.60).

On Saturdays, with the flag of Belém do Pará hoisted on the facade and the sound of carimbó, the duo of chefs serves an authentic tacacá with tucupi, with shrimp, jambu and cassava gum, alongside tapioca gelato (R$37).

Fixed on the menu and great options for snacks, the gyozas at Panda Ya are served with a surprising wasabi gelato (R$19.90), and a tasty portion of angu pastries – a recipe from Minas Gerais – with the following fillings: meat, chilli and red creole corn, homemade sausage, cheese and beet paste and activated charcoal with mountain cheese (R$24), all accompanied by green corn gelato. For dessert, it’s worth trying the one that combines butiá and vanilla gelato from the Cerrado with pupunha (the fruit of the palm tree), which, as they say in the south, “is so good to drop the butiá in your pocket”.

The angu pastries are delicious — I could have 10 more servings, they are so delicious! The portion features a mix of flavors stuffed with well-seasoned ground beef and mountain cheese, served with green corn gelato, which I had never tried, but I loved.

The crab with farofa and accompanied by lemon gelato was my choice. I found it extremely unusual for gelato to come on the plate and not as a side dish. That’s because the idea is that he is a part of the main course and he harmonizes very well with the other stars of the preparation.

There are many different flavors, with typical fruits from all regions of the country — the chefs themselves travel to these places to pick, together with the producers, the best seasonal fruits.

All are delicious, but for those who still prefer the classics, my suggestion is the pistachio and vanilla ice cream from the cerrado:

The pistachio one ranked as the best I’ve ever had—and even my husband, who doesn’t normally like the flavor, loved it;

Vanilla, in turn, is a flavor that has become increasingly popular — and artificial, made with vanilla essence. But not here. It is made with the plant’s own pod and is also mouthwatering.
