Nothing like eating a good hamburger, a hot dog or toast with mayonnaise. The sauce and its variations are loved by many people and what most of them don’t know is that making them at home is super simple and easy – and you can make it very light, yes! The secret? Add the oil slowly.

Ingredients
2 eggs
2 cups of oil
Salt and ground black pepper
1 clove of minced garlic
1/3 cup chopped parsley and chives
1/3 cup chopped carrot
1/3 cup chopped cauliflower
1/3 cup chopped cucumber
1 lemon juice

TRADITIONAL
Put the eggs in the blender.
Add the oil in a slow stream, beating until creamy – at the ideal point, bubbles begin to form.
Season with salt and pepper. Serve.
OF GARLIC
Just add garlic to traditional mayonnaise and blend in a blender until incorporated.
HERBAL
Add the chives and parsley and blend in a blender. Like garlic, it goes well with barbecue and sandwiches.

TARTAR SAUCE
Blanch the carrot and cauliflower by leaving them in boiling water for a minute. Cool in a bowl with ice.
Drain the cauliflower and carrots and mix with the herb mayonnaise. Add the cucumber.
Season with salt, pepper and lemon juice. Serve. Pairs well with fish in general and seafood.
CHEF TIPS
- The eggs must be at room temperature for the oil to emulsify and for the mayonnaise not to become runny.
- Store it in the fridge in a closed pot and consume within three days.
- To enhance the flavor, add a drop of lemon to the mayonnaise just before serving.
- Adding garlic and herbs to the same mayonnaise is also delicious.
