. Salt and black pepper to taste
. 2 tablespoons ice water
. 1 teaspoon light butter
Method of preparation
Place the eggs in a container with the curd and season with salt and black pepper. Beat well with a fork and, when it’s time to bring it to a boil, add the cold water. Pour into an antiadherent skillet greased with butter. Cook slowly over low heat (160 °C) and stir constantly with a wooden spoon until the desired consistency is reached.
