All together and mixed up

In the first model, called a French press, hot water is mixed with the powder and, after four minutes, it is necessary to press a plunger that, when going down, filters the coffee. “It’s very practical, but it makes a greasy and slightly bitter drink”, explains Lisboa.

The Italian coffee maker goes straight to the fire and has three parts: the bottom one holds the water; in the middle, a funnel for the powder; and on top, the teapot. When the water boils, it rises, passes through the filter, and the finished drink is on top. Then just serve! “Turn it off as soon as the coffee starts to bubble so it doesn’t get bitter”, says Lisboa.

The espresso machine has a pressurizer that allows a shorter preparation time: 35 ml of coffee comes out in 30 seconds. But that’s not the only advantage: “These machines prepare a more full-bodied and tasty coffee and only with them do you get the crema, that white part that remains on the surface of the drink”, says the specialist.

There is also the model that asks for coffee powder, sachet or capsule. “The capsules are the closest to professional preparation. The sachet brings a less full-bodied coffee.”

Traditional but not so much

Electric coffee makers prepare the same filtered coffee that you make at home with a cloth or paper strainer. Just put the coffee powder and water and turn on the coffee maker. The barista gives a valuable tip: “Use mineral or filtered water, never from the tap, so as not to interfere with the flavor of the coffee. And prepare three measures of water for one of coffee”, he says. The downside of electric coffee makers is that the caffeine concentration in the drink is higher. Do not exaggerate!
