The news is that the cooking water helps in weight reduction, according to a study by the National Organization of Agriculture and Food Research, in the Japan. The liquid concentrates the peptides – biomolecules from potato protein (yes, it has protein!) – which prevent the blood sugar spike and, with that, prevent the organism from storing more fat.

The test was carried out on mice: proteins extracted from water, even combined with a fatty diet, led to a reduction in adipose tissue. It still remains to check the result in human beings, but the nutritionist Gabrielle Gonçalves, from Clínica Dr. Caroline Frota, in Rio de Janeiro, suggests using water to prepare soups and juices. “The resistant starch left over in the liquid, in addition to attracting sugar and fat molecules, improves the health of the intestine. There is a lower risk of inflammatory processes and weight gain.”
