Recipe: fit pineapple mousse –

Performance: 10 servings of 130g

INGREDIENTS

1 large pineapple (peeled and cut into cubes, without the hard part in the middle)
500ml of water
2 pots of natural low-fat yogurt
1 cup coconut milk (or other plant-based milk)
2 tablespoons cornstarch
1 package of unflavored gelatin
honey (optional)

METHOD OF PREPARATION

Put the pineapple in a pan and cook for 20 minutes. Let it cool and book in the fridge;
If you want to include honey in the recipe, mix it in the cooked pineapple after removing it from the heat;
After that, prepare the unflavored gelatin as indicated on the package — you don’t have to wait for it to harden;
In a separate container, dissolve cornstarch in coconut milk;
Blend in a blender until very creamy: the yogurt + half the pineapple cut and cooked + the gelatine + the cornstarch dissolved in milk;
On a platter, pour the beaten cream and add the other half of the pineapple cut and roasted and mix;
Leave it in the fridge until it’s firm and cold.
