1. Wash and soak six passion fruit for 20 minutes in a mixture of water and sodium bicarbonate (1 tablespoon per liter) or vinegar. Rinse them under running water again.
2. Cut them in half, remove the pulp and save to make juice.
3. Cut the peel into strips, place on a baking sheet and bake in a medium oven for about 30 minutes or until dry. Wait for it to cool down.
4. Hit the blender (or pass the processor) until you get a flour.
5. Pass through a sieve and store in a clean, covered container.
