Marinated tofu: three delicious recipes

Since plain tofu tastes quite mild, it needs a strong marinade. We explain how to prepare a red coconut marinade, a yellow curry marinade or a green Mediterranean variant.

1. Tofu marinated in red coconut marinade

Preparation time: approximately 40 minutes (without waiting time)

Ingredients (for 1 200 g piece of tofu):

200 g of natural tofu200 ml of coconut milk2 tablespoons of tomato sauce or tomato concentrateJuice of ½ lemon1 teaspoon of smoked paprikaSaltPepper1 pinch of birch sugar or similar

Elaboration:

Squeeze the tofu by placing a weight on top for about 30 minutes. In this way, it will later absorb the marinade better. Meanwhile, mix the coconut milk, the tomato sauce or concentrate, the lemon juice and the paprika. Season with salt, pepper, and sugar (if using tomato paste). Squeeze the tofu carefully by hand. Then cut it into slices or cubes and place them in the marinade. Mix well so that the tofu is completely covered with the liquid.Marinate overnight, or at least four hours, covered.Heat the coconut tofu in the marinade and accompany it with rice.

2. Marinated tofu with yellow curry

Preparation time: approximately 40 minutes (without waiting time).

Ingredients (for 1 piece of tofu (200 g):

200 g plain tofu 100 ml soy sauce 25 ml water Zest of ½ lemon ½-1 tsp chili powder 1 tsp curry 2-3 sprigs of lemongrass 1 large piece of ginger

Elaboration:

Squeeze the tofu for about 30 minutes. Meanwhile, mix the soy sauce, 25 ml of water, lemon zest, chilli and curry powder. Clean and finely chop the lemongrass. Peel the ginger and finely chop or grate it. Add to the soy sauce mixture. Squeeze the tofu again, then dice. Pour in the marinade and coat the tofu well on all sides. Cover and marinate for at least four hours, preferably overnight. For later use, drain the tofu, fry it in oil until crisp, or briefly steam it. This tofu pairs well with glass noodles, colorful vegetables, and as a pancake filling. Drizzle some of the remaining marinade over the finished dish.

3. Tofu marinated with Mediterranean herbs

Preparation time: approximately 40 minutes (without waiting time).

Ingredients: (for 1 piece of tofu (200 g)

200g natural tofu75ml white balsamic vinegar75ml water1 lime2 cloves of garlic2 sprigs of rosemary3 sprigs of thyme2 sprigs of basilPepperSalt

Elaboration:

Squeeze the tofu using a board and weight for about 30 minutes. Meanwhile, mix the vinegar and water. Grate the lime, peel the garlic and cut into thin slices. Wash the aromatics, tear off the stems and chop finely. Mix it all with the vinegar water. Season with pepper and salt. Squeeze the tofu again by hand, cut into cubes or thin slices. Place it in the marinade so that it is completely covered. Leave covered for at least four hours or overnight. Remove the tofu from the marinade and drain well. Fry the tofu in hot oil in a pan until crisp all over. This tofu tastes great with pasta, a green salad with tomato and cucumber, or on grilled skewers with vegetables. Use the remaining marinade for a salad dressing.
