How to turn crepioca into a light and complete dinner –

Is it practicality that is spoken? Preparing a crepioca (a type of pancake made with tapioca gum and egg) takes just a few minutes. But the recipe (see here) suggested by our nutrition editor Eliane Contreras, author of the Simple and Healthy series, guarantees protein and fiber – important nutrients to lower the carbohydrate glycemic index and increase the feeling of satiety.

And, as the seasoning makes all the difference, the spinach and cottage crepioca still has oregano, tomato and onion. Thus, the preparation, usually consumed for breakfast, is a success at dinner. You can use creativity to vary the ingredients: instead of spinach, put broccoli, arugula, escarole or cabbage; replace the cottage cheese with buffalo ricotta or half-cured cheese. There is also no limit to herbs and spices: in addition to oregano, add turmeric, black pepper… The more flavor the better!
