1. Double Chocolate Buckwheat Cookies

Instead of buying buckwheat flour, you can prepare it at home if you want; it is very easy, since you simply have to grind the buckwheat into grains. As it is a soft grain, you do not need a special machine to make it: a blender or a glass blender is enough.

Ingredients (16 cookies):

200 g buckwheat flour 50 g tapioca starch 1 tsp baking yeast 3 tbsp raw cocoa powder 1 tsp vanilla extract 150 ml light coconut or olive oil 150 ml maple syrup 100 g chocolate drops

Preparation:

Preheat the oven at 180 degrees.Mix all the dry ingredients in a bowl.in another bowl, mix wet ingredients. Add to the dry ingredients and mix well. Add the chocolate drops and mix.Grease a baking tray with a little oil or line with parchment paper. With the help of a tablespoon, form cookies and crush a little. Bake some 12 minutes and done!

You can keep the cookies in a tupperware for up to 5 days.

2. Quinoa and almond cookies stuffed with jam

Preparation: 15 minutes – Cooking: 15 minutes

3. Gluten Free Brown Rice Cookies

One VGluten-free version of classic chocolate chip cookies. This version is healthier because it contains brown rice flour and unrefined sugar.

Ingredients (12 cookies):

120 g brown rice flour 30 g cornstarch 1 tablespoon tapioca starch ½ teaspoon xanthan gum (optional, to give consistency) a pinch of salt 2 teaspoons baking powder 150 g whole cane sugar 4 tablespoons coconut oil 1 egg (or 1 tablespoon of ground flax seeds, to make flax “egg”)half a teaspoon of vanilla extract100 g of chocolate chips

Preparation:

Preheat the oven at 180 degrees and line a baking tray with parchment paper or grease with a little oil.If you are going to use the linen “egg”, Mix 1 tablespoon of ground flax with 3 tablespoons of water in a bowl and let sit for about 5 minutes to form a gel.In a large bowl, mix flour, starches, xanthan gum, salt, baking powder and sugar. If necessary, add a little vegetable drink, a teaspoon at a time.Form balls with your hands and crush until you get a cookie shape. You can decorate the cookies by making stripes on top with a fork. Bake some 10-12 minutes.
