Alex Atala opens healthy food restaurant – and it’s incredible – BOA FORMA

Eating at an Alex Atala restaurant is the dream of many people. No wonder: the best rated Brazilian chef in the Michelin Guide is ahead of the famous DOM, which has two stars in the most respected book of gastronomic criticism, and Dalva e Dito, which has one star.

On the last May 15th, Atala opened the doors of Bio, his new establishment, also located in São Paulo. The proposal is different: to serve natural food with a healthy approach, with maximum use of the ingredients used to prepare the dishes and drinks served there.

The house follows the concept of other restaurants in the city, such as Frutaria São Paulo – whose partners, by the way, joined Atala to open Bio. From Monday to Sunday, the doors open at 8am and close at 11pm. On the menu, an infinity of options: for breakfast, you can order scrambled eggs (R$ 7) and crepioca (R$ 17), as well as coffees, teas, frappes and juices; at lunch, the protein of your choice (R$29) can be accompanied by a side dish (R$9) or, if you prefer, opt for one of the various salads (R$25) on the menu. Diners will enjoy the oven-baked sandwiches (R$25) and the drinks served at the cocktail bar – made with demerara sugar and unusual ingredients, such as coriander, okra and jabuticaba.

Part of the menu is also dedicated to daily specials, prepared by chef Raul Godoy and his team using the freshest ingredients that arrive at the restaurant daily. We tried the grain mix salad, which, in addition to green leaves, has pearl barley, wheat and red rice mixed with an oat yogurt sauce. For the main course, the chorizo ​​steak with ora-pro-nóbis (the pancs are all over the menu) was great together with organic roasted beetroot with homemade cottage cheese and oat vinaigrette (R$ 9), one of the side dishes of the day . That Wednesday’s dessert was another good surprise: lemongrass pie (R$12)

One of Alex Atala’s main concerns is the environment – ​​and this is reflected in Bio’s preparations. The skin of the mango, for example, is used in the granola made in the kitchen itself. Cabbage stalks go into the farofinha that goes very well with meat. The avocado pit is toasted and replaces the nuts in the pesto sauce. What cannot be included in dishes goes to the barbecue, where the ham prepared there is smoked.

The concern for sustainability is also present at the tables: cutlery and plates are changed only when the customer asks for it, and the water – whose special filter has a triple filtration system – is served directly into the glass, to avoid the excessive use of plastic bottles .
