Have you ever asked yourself the question: whole grain pasta is less fattening than refined pasta? So know that yes. Despite the two having a minimal difference in terms of caloric value: in 80 grams, the wholemeal has about 270 calories and the refined 280. The secret of the wholemeal is to have fiber in the dough. “They make you feel full, in addition to reducing the speed of carbohydrate digestion, which makes hunger take longer to return”, explains nutritionist Ana Cristina Teixeira, from Equilibra Centro de Nutrição, in Rio de Janeiro. This is not the case with refined pasta: “Without fiber, it quickly becomes sugar in the blood and triggers the production of insulin – a hormone that, in excess in the body, increases fat stores, especially in the belly”, warns the nutritionist.
