Water kefir, a classic ferment to make at home

Water Kefir Recipe

This recipe is ideal to take on an empty stomach:

Ingredients

1 liter of filtered water40 grams of sugar4 tablespoons of kefir granulesHalf a lemon20 grams of raisins

Preparation

Mix the sugar with the water. Add the kefir granules, the lemon and the raisins (or another dried fruit such as dates or figs). Cover with a cloth and leave to ferment for 48 hours (less or more depending on how strong you like it). Strain it , add the lemon, without squeezing (I love the flavor it gives, but you can not use it), and to the fridge. The fridge is basic so that it ferments more and generates that typical effervescence of soft drinks.

Some tips for making water kefir

One has to open the bottle from time to time so that too much carbon dioxide does not accumulate; if it takes a long time it could come out at full pressure.

Once strained, you can add fruit or an infusion to kefir and leave it for 24 more hours.
