For the chestnuts: 750 grams of chestnuts, 300 of fondant chocolate, 100 milliliters of milk, 160 grams of sugar, 120 milliliters of olive oil, four eggs and 60 grams of cornstarch. For the rum sauce: 200 milliliters of cream, 225 grams of sugar, 40 milliliters of milk, 20 grams of cornstarch, 75 grams of butter, 50 milliliters of rum and a cinnamon stick. 1.-We make a cut in the chestnuts (andThis is very important, since if we didn't they would explode) and we cook them in water for about 15 minutes. As soon as they are warm, we peel them and separate 200 g that we will need for the sauce. We beat the rest with the mixer, along with the milk and set aside.

2.-We melt the chocolate in the microwave and we also booked. We separate the whites from the yolks and beat the latter with the sugar until they double in volume.

3.-Now add the chestnut puree, oil and cornstarch. We mix all the ingredients well and add the melted chocolate. We whip the egg whites until stiff and add them.

4.-We pour into a mold, spread with butter and flour, and place in the oven, previously heated to 180º, for 30-40 minutes. As soon as it cools, we pour it onto a plate.

5.-Let's now prepare the rum sauce and to do this we cook the chestnuts that we had reserved with 125 g of sugar and half a liter of water, for half an hour over low heat.

6.-We bring the cream to a boil with the remaining sugar (100 g) and cinnamon. We dissolve the cornflour in the cold milk and add it, as well as the rum and the butter in pieces. We take out the cinnamon stick, lower the heat and cook for about 3 minutes, stirring constantly.

7.-We remove from the heat, we pour in the chestnuts that we had cooked (without the syrup) and we pass everything through the blender. We will have a soft cream that we pour over the cake.

8.-Next we make the syrup, Cooking the sugar with a little water and pouring it over the cake. It will harden immediately, but then it melts, which makes it delicious.
