Ingredients

Pasta

4 cups of wheat flour (560 grams) 4 cups of refined sugar 2 cups of boiling milk 2 tablespoons of margarine or butter 2 tablespoons of baking powder 8 eggs (whites and yolks separated)

Filling

1 liter of milk 8 tablespoons of sugar 6 tablespoons of cornstarch 1 envelope of vanilla sugar 4 egg yolks

Syrup

1 can of condensed milk 1 can of milk (measured by the can of condensed milk) 1 glass of coconut milk

Decoration

3 boxes of fresh, cold cream 4 tablespoons of icing sugar 1 tablespoon of vanilla essence

Method of preparation

Pasta

Beat the egg whites until they are very firm. In the bowl of a mixer, beat the sugar with the egg yolks and margarine until it becomes a light and very smooth cream. While beating add the milk and then the flour. Incorporate the egg whites into the previous mixture, using a spatula, and in enveloping movements. This is important to avoid losing the air in the egg whites and to make the cake batter very light and fluffy. Lastly, add the yeast and stir gently. Divide the dough for this cake between two 35 cm x 25 cm baking trays greased with flour and sprinkled with butter. Bake in a preheated oven at 180ºC until lightly browned. Pay attention to the cooking process, as it will be very quick, between 15 and 20 minutes.

Filling

While the cake bakes, prepare the filling by mixing all the ingredients in a pan on the heat. Stir until it thickens, turn off and let it cool a little.

Assembly

Once the cakes are baked, let them cool a little before removing them from the mold and cutting them in half to fill them. Divide the filling between the two cake halves and cover with the respective half. Make the syrup by mixing all the ingredients in a blender. Pierce the cakes with a fork and pour the syrup over them, waiting for it to absorb before adding more. Assemble the cake by simply overlapping the layers of dough, so you will have a homemade wedding cake with four layers of cake and two layers of filling. Prepare the frosting for the topping. Beat the cream until it is very consistent, forming peaks. Then, add the sugar and vanilla essence and continue beating until it becomes a shiny whipped cream. Place in a piping bag fitted with a piping tip or other tip and use to decorate the cake as desired. Finish with other elements of your choice, such as fondant flowers, pearlescent sprinkles and more. Reserve in the refrigerator until ready to serve.

Pasta

Beat the egg whites and set aside. Beat the egg yolks and sugar until light and fluffy. Add the wheat flour little by little, without stopping beating the dough. Add the water, little by little. Add the baking powder and mix gently. Add the egg whites and mix, from top to bottom, gently to incorporate them into the dough. Pour the dough into a greased and floured pan. Bake in a preheated oven at 180ºC. Increase the oven to 250ºC, add the sponge cake and leave it until it turns brown. Remove from the oven and let the dough rest for a few minutes at room temperature. Wait for it to cool and unmold.

Filling

Just beat the cream (cold) and, as soon as it starts to gain consistency, add the sugar little by little. The cream will gain consistency as you beat it. When it’s very firm (without falling off the beater), it’s time to stop beating.

Assembly

Use part of the whipped cream from the filling as a topping and decorate with fresh red fruits.
