Isis Valverde has not consumed gluten since she was 19, when she found out she has celiac disease, an alteration in the immune system caused by the protein present in wheat, rye and barley. “I weighed 45 kilos and my hair fell out in clumps. I went to the ICU a few times – the last one after I took a chocolate drink that had gluten”, says the actress. Therefore, lunchbox is an inseparable friend. “A simple ready-made spice can trigger a flare-up,” she adds.
Carla Cotta, a functional nutritionist from Rio de Janeiro, takes care of the actress’ diet. Isis sought her out about a year ago to reduce the percentage of body fat and lose a few pounds. The goal of reaching 50 kilos was achieved. “I make good choices: I prefer natural and organic foods. I don’t drink soda or eat fried foods. I also reduced the sugar – the only temptation is my grandmother Leila’s dulce de leche, who lives in Minas, ”she says. By cutting out gluten and restricting lactose and sugar, inflammatory substances, Isis not only dried her skin but also eliminated cellulite.
“The menu is quite varied, with wholemeal and healthy options, more fish and chicken than red meat, always an option with egg and a day of gluten-free pasta”, reveals Carla. And the food is handpicked. “They have a high load of nutrients and make the metabolism work well”, adds the expert.

In the lunchbox. “There is no shortage of oilseeds, such as almonds, Brazil nuts and cashew nuts”, says Carla, who recommends toasting them in the oven without salt. Other snack options are fresh and fruit compote, juices, sheep’s milk yogurt, gluten-free wholemeal bread sandwich with buffalo mozzarella, tapioca stuffed with banana and cinnamon. In the meals, come prepared like brown rice quiche. A thermal bag, which stays in the freezer, preserves food for six hours.
At the gym. Isis does not take a protein supplement – the nutrient is present in good amounts in her diet. “Lean meats, quinoa and avocado help in defining and gaining lean mass”, says Carla. Before training, she eats a piece of fruit with gluten-free granola. Then yogurt or lactose-free cheese.
Antioxidant cocktail. The actress bets on anti-inflammatory herbs, such as turmeric, rosemary, oregano and ginger, which are also bactericidal and antifungal. And in wheat chlorophyll, rich in nutrients such as magnesium, which favors hair and skin health.
