Not always. The fiber, vitamin and mineral content can be even higher in frozen foods, according to an assessment by the University of California, USA. The specialists compared eight vegetables and fruits – corn, spinach, carrots, broccoli, peas, green beans, blueberries and strawberries – fresh and frozen.

Overall, the nutritional value between them tied. But in the case of broccoli, the subzero temperature preserved more vitamin B2; and vitamin C in corn, green beans and blueberries. In natura foods usually lose part of these nutrients in transport and poor storage.
