How ice cream will save Earth’s summer –

Brazil is one of the ten largest ice cream markets in the world. Every year, Brazilians consume about 1.2 billion kg of dessert (5.5 kg per person). This national passion, however, while comforting our emotions in times of sadness and refreshing our bodies on hot days, at the same time jeopardizes the best summer in the universe: ours.

The environmental impact of ice cream production, from raising the cows to extracting the milk, processing and storage and producing the recipes, is enormous: for every liter of ice cream, at least twice as much milk is needed. In other words: the agribusiness chain, in order to bring a little freshness and sweetness to our daily lives, is also responsible for the climate impact on the world – this year we can already see that summer is very different.

Therefore, to preserve this perfect combination (ice cream and summer), NotCo, a global plant-based foodtech, brought the new NotIceCream line to refrigerators throughout Brazil, the 100% plant-based non-ice cream made with a production that requires 77% less energy, 94% less water and emits 77% less CO2 than the traditional recipe, in addition to, obviously, eliminating the entire impact of using milk from the process.

The delight hits the market in recyclable paper packaging in two sizes (473 ml and 100 ml) and with the largest variety of flavors in the segment: chocolate; strawberry with hazelnut cream; milk cream; coffee with cocoa; crunchy vanilla and salted caramel. The brand’s objective in creating flavors that encourage guilt-free consumption is precisely to show that, to save the planet, it is not necessary to give up on flavor, much less stop enjoying yourself.

mouth full of trends

According to data from The Good Food Institute, half of Brazilians reduced meat consumption in the last 12 months. The same survey points out that 39% of people have already consumed vegetable products in place of those of animal origin. In the ice cream category, 42% of Brazilians already know plant-based options, but only 15% have already tasted these delicacies. However, of those who have already tasted this revolution, 90% say they will continue to consume the option with less impact and more flavor.

The Taste of TechnologyThe secret behind NotIceCream is the Artificial Intelligence Giuseppe. NotCo’s proprietary algorithm studies daily infinite combinations of plant-based ingredients that can replicate the taste of animal products and make dessert, as well as tasty, sustainable.

NotCo’s technology involves the formulation of recipes and sensory studies on food, with an operation supported by a team of chefs and researchers who, in this case, manage to replace milk, mainly, with plant-based ingredients with low impact on production and handling. NotCo constantly seeks to improve the composition because it believes in the diversity of ingredients.
