2 chicken breasts 1 unit of onion 3 cloves of garlic 1 can of corn 1 unit of small cauliflower 3 tablespoons of light cream cheese (other options: cottage cheese or ricotta) 2 tablespoons of olive oil 150 grams of light mozzarella cheese 1 teaspoon of cornstarch nutmeg black pepper salt

Method of preparation

Cook the chicken in a pan with water until covered, with half the onion and salt to taste. Cut the cauliflower into pieces and also cook in a pan of water or steam. After cooking the chicken, shred it and set aside. Heat a pan with the olive oil, the remaining chopped onion and the chopped garlic, and sauté until golden. Then, add the chicken, half the can of corn, mix everything and turn it off. Now prepare the cauliflower béchamel: in a blender, blend the cauliflower with the rest of the corn and the cream cheese. Place it in a pan, add the cornstarch dissolved in half a cup of the chicken broth and stir until it becomes thick. Season to taste with nutmeg, salt and pepper. Mix the sautéed chicken in the previous cream and place it in a greased baking dish. Cover with the mozzarella and bake at 200ºC until the cheese melts and turns golden.

Fit chicken burger with oats

Ingredients

350 g chicken breast (ground) 1/2 chopped onion 2 cloves of garlic chives to taste 2 tablespoons of oat flour sweet paprika to taste black pepper and salt to taste olive oil (to grease your hands and fry)

Method of preparation

In a blender or processor, add the chicken (already ground), onion, garlic, chives and blend until it forms a dough. Transfer to a large container, add the oat flour, sweet paprika, pepper, salt and mix well. Rub olive oil on your hands and start shaping the burgers to the desired size. Place the burgers in the freezer for 20 minutes. In a frying pan, add a drizzle of olive oil and brown both sides of the burgers.

500 g of chicken fillet, in small cubes 3 tablespoons of soy sauce 2 onions, in thick slices 1 tablespoon of diced green pepper 1 tablespoon of diced red pepper 2 tablespoons of celery in thin strips 1 tablespoon cornstarch salt and black pepper to taste 1 tablespoon peanuts

Method of preparation

Season the chicken pieces with soy sauce, salt and black pepper. Place to fry in a pan over medium heat, stirring occasionally. Add the onion, peppers and celery. Separately, dissolve the cornstarch in a little water and add to the stew. Stir well until the sauce thickens. Decorate with peanuts.

2 cups oat bran 2 ½ cup skimmed milk 4 eggs salt oil for greasing olive oil 1 chopped onion 2 cooked and shredded chicken breast fillets 1 grated carrot 2 chopped tomatoes 1 cup frozen peas black pepper basil 2 cups tomato sauce chopped parsley

Method of preparation

In a container, place the oat bran, milk, eggs, salt, and mix well. In a frying pan, brush a little oil and add a ladle of pancake batter. Spread it well throughout the pan. Brown on both sides and set aside. In a pan, add a drizzle of olive oil and sauté the onion for 3 minutes. Add the shredded chicken and sauté for another 2 minutes. Add the grated carrot, chopped tomato, peas, and sauté for 3 minutes. Season with salt and pepper. Finish with basil. Place the chicken filling on a pancake disc, roll it up and place it on a platter. Repeat this process with all the pancakes. Finish with tomato sauce and chopped parsley. Place in the oven to heat and serve.

Ingredients

3 tablespoons of olive oil 1 kg of chicken breast in strips 2 envelopes of ready-made seasoning 1/2 cup (tea) of water 250 g of carrot in strips 250 g of snow peas 1 stalk of celery in strips 1 pinch of salt

Method of preparation

In a pan, heat the oil, add the chicken breast, the seasoning envelopes, and let it brown, without stirring too much to avoid adding liquid. Add the water and carrot to cook it slightly.
