Bento cake story

The name is linked to a Japanese tradition. The “bentô” or “obentô” is a lunch box prepared to show affection for someone. It all started with farmers and fishermen who began to package the day’s meal during the 12th century. Over time, it gained special details, with foods separated according to category and with decorations.

The word “bentô” has been combined with “cake” (cake, in English) and has the meaning of “lunchbox cake”. The delicacy is also known as “lunch box” (in English) and “doshirak” (in Korean), both terms indicating “lunchbox”. Thus, it is clear that the origin of bento cakes is from outside Brazil.

It consists of a cake approximately 10 cm in diameter, placed inside a disposable box, which usually has a fork attached internally to one of the flaps. Another difference is the decoration, which tends to be very colorful and attracts a lot of attention. That’s why it’s been so successful on Instagram and Pinterest posts.

How to make bento cake?

You can use a conventional cake recipe, usually chocolate or vanilla. Then, the small cakes are cut with the help of a mold, receiving various fillings and decorations.

Ingredients

4 eggs 100 ml of oil 1 1/2 cup of sugar 250 ml of warm milk 1 cup of 50% chocolate powder 2 1/2 cups of wheat flour 1 tablespoon of baking powder 1 dessert spoon of paste flavoring or vanilla essence Shape measuring 38 cm (length) x 26.5 cm (width) x 5.5 cm (height)

Filling

600 ml of milk 1 can of condensed milk 200g of cream 1 cup of powdered milk 2 tablespoons of cornstarch 1 egg yolk

Method of preparation

In a blender, place the eggs, oil, sugar and flavoring paste or essence. Beat for 3 to 4 minutes and add the chocolate powder and warm milk. Then, place the mixture in a basin. Add the flour and yeast. Mix with the help of a whisk. In the preheated oven at 180°C, place the mold with the dough and let it bake for around 45 minutes.

Filling – bento cakes

In a pan, mix the condensed milk, cream, powdered milk, starch and egg. Add the liquid milk and turn the heat to medium to low, stirring constantly. After about 10 minutes, the filling becomes creamy and the heat can be turned off.

Assembly

Cut six circles of dough using a mold to the desired size. Cut the disc in half. Drizzle one of the parts with syrup and add the filling. Place the other part of the disc on top, drizzle with syrup and decorate as desired.
