Preparation:

1½ cup almond flour 1 cup sunflower or pumpkin seeds (or their mix) ½ cup coconut flour ⅓ cup ground flax seeds ⅓ cup plus 2 tablespoons psyllium 1 tablespoon baking powder 1/2 teaspoon salt 2 tablespoons olive oil 1 teaspoon of apple cider vinegar2 cups of hot water

Preparation:

Preheat the oven at 200 degrees and line a bread mold or tray with parchment paper or grease with a little oil.Crush the seeds of sunflower or pumpkin until obtaining flour.In a bowl, mix all dry ingredients. Add the water, oil and vinegar and mix well with your hands for 1-2 minutes. It is important that the water is warm for the psyllium to activate. You should get a non-sticky dough. If it is too sticky, add a little more flour and let the dough rest for 10 minutes. After this time, shape the dough into a loaf and cook for a few 50-55 minutes until, when poked with a toothpick, it comes out dry.

4. Keto Ricotta Cheese Rolls

Preparation: 15 minutes – Rest: 15 minutes – Cooking: 60 minutes
