Add a spoon of oregano, 800 grams of canned tomatoes, two spoons of tomato paste and a spoon of sugar. Cook over low heat until the sauce thickens. Add four fresh, chopped and skinless tomatoes. Season with salt and pepper.
Garlic sauce
This sauce is the champion in simplicity. Finely chop a bunch of fennel without the stalks. Mash it with the blade of a knife to extract the juice. Mix the fennel with 250 grams of cream. Mince one to three cloves of garlic and add all the ingredients. Season with salt and pepper.
Mustard and sour cream sauce: perfect for fish
In a pan, pour 200 ml of cream with 20% fat and start cooking on a slow fire. Add a spoonful of regular mustard (optional), a spoonful of dijon mustard, two spoonfuls of honey, squeeze the juice of a quarter of a lemon and mix everything. In a skillet, heat the mustard seeds (1 tsp) and cilantro (1/2 tsp) slightly. Once they are golden, add the sauce. When it starts to thicken, add your favorite herbs (fennel, parsley, chives…) and remove from the heat.
Cream Cheese Sauce: Excellent for Pasta and Potatoes
In a pan, mix 200 grams of cubed Philadelphia cheese, 10 ml of vegetable oil and 200 ml of sour cream. Cook over medium heat until it boils, stirring occasionally. When the sauce starts to boil, reduce the heat and add seasonings to your liking: basil and pepper can be good options. Continue mixing so that the sauce does not form pellets. Add 50 grams of grated cheese and taste it.
Tartar sauce
Another simple, delicious and quick to prepare sauce. Six spoonfuls of mayonnaise; or six of sour cream; or three of mayonnaise and three of sour cream. Finely chop 100 grams of cucumber and a small sprig of parsley. Add a crushed garlic clove and mix everything with mayonnaise (or sour cream). Add salt and pepper and place in the fridge for an hour. You can also add a quarter of lemon juice, 1/2 teaspoon of mustard and chives. This sauce is perfect for chicken, fish and shellfish.
Honey Mustard Sauce: Chicken’s Best Friend
Mix half a cup of mustard, 1/4 cup of honey and 1/4 of a teaspoon of grated ginger. Let the sauce rest in the fridge. It’s great to follow nuggets of chicken, chicken with bird and roast chicken.
Red wine sauce for meat
Heat 1 and ½ tablespoons of olive oil in a skillet. Add the finely chopped onion and fry over a low heat, mixing for 7 minutes until golden. In a bowl, put two glasses of red wine and 175 ml of water, let them cook for 10 minutes. Mix 40 grams of melted butter and a spoon of flour to get a paste.
Gradually add the mixture from the bowl to the skillet, stirring constantly.
Add some of the beef broth to the sauce. If desired, add parsley, salt and pepper. If the sauce is too acidic, add a little sugar to balance it out. The alcohol present in the wine evaporates and remains just a pleasant reduction.
mushroom sauce
Finely chop 200 grams of mushrooms and an onion. For 15 minutes, fry them over a low heat. Close the pan so that the liquid does not evaporate. Add 150 grams of cream and continue cooking for 5 to 7 minutes, add herbs to taste and a clove of crushed garlic. Remove from fire. If you want a more uniform consistency, put the sauce in a blender. Pairs with meats, potatoes and ravioli.
Barbecue sauce (BBQ): for roasted dishes
Melt 50 grams of butter over medium heat. Add a cup of finely chopped onion. Fry everything for 4 to 5 minutes on low heat.
Add 200 ml of ketchup or tomato paste, 1/3 cup of water, 50 grams of honey, two tablespoons of lemon juice and 1/4 teaspoon of ground black pepper. Keep on fire until boiling. Put the lid on the pan and cook until the sauce is thick.
Andalusian sauce
Mix 200 grams of mayonnaise, three spoonfuls of ketchup, 1 teaspoon of cognac, a finely chopped onion, lemon juice to taste and pepper. Place in a bowl and leave in the fridge for an hour.
spanish sauce
Blend 15 cherry tomatoes, a clove of garlic, a sprig of fennel and a portion of chives in a blender. Add a spoonful of balsamic vinegar, a spoonful of tomato paste and a spoonful of olive oil. Add salt and pepper.
pesto
A classic of Italian cuisine. Place 50 grams of basil, two cloves of garlic, 50 grams of Parmesan cheese (or other hard cheese), three spoonfuls of beaten pine nuts, 100 ml of olive oil and salt in a blender. This sauce is great for pasta, salads and eating with bread.
Sweet and sour sauce: not just for Chinese dishes
Mix 1 and 1/2 spoonful of sugar, two spoonfuls of vinegar, one spoonful of tomato paste, one spoonful of soy sauce and 3 spoonfuls of orange juice. Gather everything in a separate container and add 1 spoon of corn flour and four spoonfuls of water. Bring the sauce to a boil. Stir constantly until it gains consistency. It goes well with beef, pork and chicken.
Italian seasoning for salads
Mix in a jar 2 and 1/2 tablespoons of olive oil, 1 and 1/2 tablespoon of balsamic vinegar, half a clove of crushed garlic, 1/4 teaspoon of salt and pepper to taste. Close the container and shake it.
Caesar salad dressing
Beat a teaspoon of mustard with an egg yolk and a teaspoon of salt. Carefully pour in 150 ml of olive oil, and mix until it reaches the consistency of mayonnaise. Add a spoonful of lemon juice, a spoonful of ground pepper, two crushed garlic cloves, 50 grams of grated Parmesan and mix again.
