10 simple vegan recipes for those who want to innovate in the kitchen

The vegan lifestyle is increasingly popular, to the point where it is common to find substitutes for animal meat in supermarkets in many cities. Words like vegan butchery, vegan soy meat and vegan cheese are making their way into our vocabulary and making their way into the world of recipes.

Vegan cooking may seem difficult and boring to do, but in order for you to break that image, we do awesome.club we chose (and prepared!) 10 recipes for beginners from this vast world. It goes for those who are vegan or simply for those who want to give up animal protein from time to time. Check out!

1. Vegan pie

Ingredients

For the filling:

3 carrots 150g bell pepper 1 small potato 1 can of peas and corn 100g onion 30 ml olive oil Oregano 120 ml water 1 tablespoon cornstarch Salt to taste Black pepper to taste

For mass:

1/2 cup of vegetable oil of your choice 2 cups of water 1 teaspoon of salt 2 cups of wheat flour. 1 tablespoon baking powder. oregano to taste

Preparation mode

Filling:

Sauté the onion with olive oil.

Add the carrots, peppers, potatoes and oregano; cook with water until it becomes al dente🇧🇷 Season with salt and pepper.

Put the cornstarch dissolved in a little water, stirring constantly until incorporated into the filling. When this happens, turn off the heat.

Pasta:

In the blender put the oil, water, flour and salt. Beat everything until well blended.

Add the yeast and gradually mix by hand.

Line the bottom of the mold with part of the dough.

Put the stuffing.

Cover with the remaining dough.

Take to preheated oven at 180°C for about 30 minutes.

2. Vegan Broccoli Stroganoff

Ingredients

1 broccoli 1 chopped onion 1 chopped tomato 350g tomato paste 1 spoonful of cornstarch Olive oil 1 pinch of salt

Preparation mode:

Cut the broccoli, removing stalks, leaves and any bruises.

Put the chopped broccoli to cook until it is al dente.

Then cut the onion and tomato into cubes.

Add the oil to the pan and sauté the onion. When it’s golden, put the tomato and let it break loose and evaporate some of the water.

Then add the tomato paste and stir slowly until it comes to a boil.

Dissolve some of the cornstarch in the water and slowly pour it into the pan until you create a consistent mixture.

Add salt to taste and finally the cooked broccoli.

3. Vegan stuffed tomato

Ingredients

4 large tomatoes 1/2 chopped onion Cassava flour 1 grated medium carrot Salt to taste Olive oil Vegan cheese

Preparation mode

Start by opening the tomatoes on top and clean them from the inside.

Then pass some salt inside the tomatoes and place them upside down on a paper towel-lined baking sheet. This process will serve to remove excess water from the tomato.

Peel and grate the carrot.

Then put some olive oil in the pan and sauté the onion.

Add the cassava flour and carrot to finish the farofa, stirring constantly to avoid burning. If you wish, you can add other seasonings, such as chives and pepper.

Stuff the tomatoes with the farofa and add the grated vegan cheese on top

Bake in a preheated oven at 180º until the cheese is browned.

4. Rice ball

Ingredients

3 spoons of wheat flour Salt to taste 2 spoons of potato starch dissolved in three spoons (soup) of water 2 teaspoons of yeast for bread Olive oil for frying Breadcrumbs Seasonings to taste (parsley, chives and black pepper) 1/2 cup water 2 cups cooked white or brown rice

Preparation mode

Mix all the ingredients and then add the rice at the end.

Roll up the dumplings and roll them in breadcrumbs.

Fry them in the hot oil of your choice, placing the dumplings in spoonfuls or bake them in the oven.

5. Vegan pastry

Preparation mode

Mix the salt in the water and bring it to a boil so that it is warm. Reserve.

Mix the wheat with the oil until you get a homogeneous mass.

Then gradually add the water and mix until you get a dough that does not stick to your hands and has a certain elasticity.

If it continues to stick to your hand, add more wheat.

Knead lightly for two to five minutes.

Spread some flour on the table and roll out the dough until it is thin.

Cut the size you want and put the stuffing of your choice.

Fry in hot oil until golden.

6. Vegan Pancake

Ingredients

Pasta

1.5 cup water 8 tablespoons wheat flour 1 tablespoon cornstarch 1 dessertspoon baking powder 1 tablespoon olive oil Salt to taste

Filling

You can stuff your pancake with whatever ingredients you like best. In this case, we made it with tomato sauce, rosemary and broccoli!

Preparation mode

Place all ingredients in a blender and blend until smooth.

In a frying pan, add a little oil, add the dough little by little and wait until both sides are golden.

Put the stuffing and roll the pancake.

If you want, add some sauce of your choice and vegan cheese over the pancakes. Place in the oven to warm up.

7. Noodles Caccio and Pepe

Ingredients

1 cup vegan cheese 2 tbsp ground black pepper for every 300g pasta Macaroni

Preparation mode

Prepare the pasta, but reduce the cooking time by one to two minutes compared to conventional preparation.

Remove the pasta and reserve the cooking water.

Add 300ml of the pasta water to a heated frying pan and add the grated vegan cheese.

Mix well and add the dough.

With a fork, mix quickly and for a few minutes.

Lastly, add ground black pepper.

8. Tomato paste

Preparation mode

In a medium saucepan, add the olive oil, onion, tomato and saute over medium heat, stirring occasionally until the tomato is soft.

When it’s lukewarm, transfer to the blender and beat until you get a paste. Add the breadcrumbs and mix well.

Season with salt, oregano and pepper sauce and stir again.

9. Vegan Nuggets

Ingredients

1/2 grated onion 1 can of corn 1/2 can of water (use the corn can measure) 2 cloves of garlic 4 tablespoons of olive oil 8 tablespoons of wheat flour Breadcrumbs for breading (optional) Salt to taste Spices to taste

Preparation mode

Take the onion and garlic to brown in the oil.

Beat the corn and water in a blender and add the spices and salt.

Transfer the mixture to the pan with the garlic and onion and bring to a boil.

Add the wheat flour and mix until smooth.

Reduce the heat and stir the mixture until the dough comes away from the pan.

Let the mixture cool completely before using.

Model the dough in the shape of nuggets – if you prefer, stuff the dough and bread in wheat flour.

Bake in a preheated oven at 180°C for one hour or until the nuggets are completely golden.

If you prefer, fry in very hot oil.

10. Vegan raincake

Ingredients

1/2 cup wheat flour 1/4 cup sugar 1 pinch of salt 1/2 teaspoon baking powder Water to the point (approximately 1/4 cup) Oil for frying Cinnamon to taste

Preparation mode

Mix all the ingredients, gradually adding water to the point.

With the help of a spoon, pour some dough into the hot oil to form the dumplings.

After they are fried, roll them in sugar and cinnamon.
