Preparation (15 minutes + 3 hours of rest + 60 minutes of cooking):

Mix all the dry ingredients in a bowl. Add the water and oil and mix well.Pour the mixture into a loaf pan previously greased with oil, cover with a cloth and let it rest for 3 hours.Preheat the oven to 180ºC. Bake the bread for 20 minutes. Remove from the mold and bake in the oven for another 35-40 minutes until cooked.

Oatmeal cake with orange and chocolate

Oats can also be used in pastries., thanks to its special texture and mild flavor. Oatmeal cookies and bars are the classics, but we can also use it to prepare muffins or biscuits. Now, since oatmeal does not contain gluten, oatmeal bakes are less fluffy.

This cake contains all the healthy ingredients of a good breakfast: oat flakes, orange juice, nuts…. We can also freeze a couple of slices for days in a hurry, since it freezes and thaws well.

Ingredients (9 servings):

150 g of fine rolled oats 2 tablespoons of chia seeds 300 ml of orange juice 110 g of melted olive or coconut oil 150 g of brown sugar 175 g of oat flour (if you don’t have it, grind rolled oats until you get flour) 50 g almond flour 2 teaspoons baking yeast 1 teaspoon cinnamon Peel of one orange 100 g chocolate chips (or dried cranberries)

Preparation (35 min. + 40 min. cooking):

In a bowl, mix the oat flakes with the chia seeds and the orange juice. Let stand for 20 minutes so that the flakes absorb the water. Preheat the oven to 180 ºC. Add the sugar, almond and oat flour, yeast, cinnamon and oil to the bowl. Mix well. Finally, add the chocolate chips or blueberries and mix well. Pour the dough into a previously greased mold and bake for about 40 minutes until cooked.

Oatmeal Pumpkin Burgers with Sunflower Seeds

Oat flakes are very useful when preparing vegetable burgers, because they absorb moisture from foods such as vegetables and help bind the dough.

For this recipe the best is use fine oat flakes to get a smoother texture. To make the hamburgers, you only need to mix some protein food, such as legumes, nuts or tofu, with some vegetable that we have on hand; then add the seasonings and mix with the flakes.

These burgers use the queen of this season: pumpkin. They are very tasty accompanied by a couple of tablespoons of hummus and a bit of green leaves, such as arugula.

Preparation (25 min. + 30 min. rest + 15 min. cooking):

Chop the onion, pumpkin and garlic. Sauté the vegetables with 2 tablespoons of olive oil in a small skillet for about 10 minutes, until the onion is transparent. In the last 30 seconds, add the spices.Chop the parsley.In a food processor, process the oat flakes and the sunflower seeds to obtain a flour that is not very fine, with a texture.In a bowl, mix the oats with the vegetables, the soy sauce and parsley. Let rest for about 30 minutes so that the oats can absorb the moisture and bind the dough. With the help of wet hands, make hamburgers and fry in a pan with a little oil on both sides.

The oatmeal It is ideal for preparing this express pizza. Gets ready without kneading or fermentingwith ingredients from the pantry.

Preparation (15 min. + 30 cooking):

In a blender, grind the oat flakes and flax until you get a flour. In a bowl, mix the dry ingredients with the water and oil. If it’s too dry, add 1 tablespoon of water until you get a dough that doesn’t stick to your hands. Line a baking tray with parchment paper or brush with a little oil. With the help of a roller or with wet hands, spread the dough, giving it a circular shape. Pre-bake the dough at 200ºC for 10 minutes. Decorate with toppings to your liking and bake for 20 more minutes.

Oatmeal cookies are a classic. They are simple, rich and ideal for breakfast or lunch or to have one or two with a coffee or infusion, because it is difficult to resist its special flavor and texture.

This is one basic recipe to which we can add different ingredients to give them flavor.

Ingredients (16 cookies):

150 g oat flakes 100 g whole wheat flour 125 g brown sugar A pinch of salt A teaspoon of cinnamon A pinch of vanilla or a few drops of vanilla extract 1 teaspoon of baking yeast 1 tablespoon of ground flax 140 g of butter, olive oil or coconut oil melted 100g chocolate chips, raisins, cranberries, walnuts or other dried fruit

Preparation (20 min. + 15 min. cooking):

Prepare the flax egg. In a small bowl, mix the ground flax with 3 tablespoons of water and let sit for about 10 minutes until it forms a gel. In a bowl, mix all the dry ingredients well: rolled oats, flour, sugar, salt, cinnamon , vanilla and yeast. Add the oil and flax egg and mix. Finally, add the chocolate or nuts and mix. Line a baking tray with parchment paper or brush with a little oil. Form small balls on the tray with the help of a spoon and flatten them with your hands to give them the shape of cookies. Bake at 180 ºC for 13-15 minutes.
