  • 2 tablespoons (30 ml) of olive oil
  • salt and freshly ground white pepper to taste

Preparation mode

  1. In a pan, place the water and bring to a boil over high heat.
  2. Crack each egg into a small bowl and set aside.
  3. When the water boils, add the vinegar and, with a spoon or fouet, swirl the water, pour the eggs, one at a time, into the center and cook for 3 to 5 minutes. Gently remove with a slotted spoon and place on a plate.
  4. In a small bowl, mash the avocado with a fork, add half the feta cheese and season with salt, pepper and lemon juice.
  5. In a skillet, toast the slices of bread with the oil.
  6. Arrange 1 slice of bread on each serving plate, arrange half of the avocado mixture, remaining cheese and 1 egg, and sprinkle with salt and pepper to taste.
  7. Serve immediately.

Scrambled eggs with mushrooms and bread crumbs

  • 1 stale french bread
  • 1 clove of garlic
