Wedding: How about changing the traditional cake for a roll cake?

If you still don’t know the roll cake, you can’t imagine what you’re missing! Considered cultural and intangible heritage of Pernambuco, the recipe came from an adaptation of the Portuguese cake called the bride’s mattress. Portuguese women had difficulty finding the products used in the original recipe in Pernambuco and, therefore, made adaptations with native products. The almond filling was replaced by guava jam. The recipe underwent minor changes until it reached what we know – and love – today: a cake with very thin layers, filled with guava paste.

And this delight, which a few years ago gained space at weddings as a souvenir option, replacing the bem-casados, now promises to dominate the wedding cake itself.

The traditional version is sold as a roulade, but with a very thin crust. The cake version for parties is made layer by layer.

Following the trend of naked cakes, the bridal roll cake reveals the countless layers of guava filling. The floors are still decorated with sugar lace, fondant flowers or fruit.

Despite the simple recipe, the bridal roll cake must be prepared by experienced hands, as the thin layers of dough and the generous amount of filling require good structuring during assembly, to prevent the cake from becoming unstable and collapsing.
