Well, know that this recipe, actually called Campana sauce, is just one of the possibilities of vinaigrette, a sauce of French origin that is characterized, basically, by the mixture of three ingredients: salt, oil and vinegar.

As with all French recipes, the reason for the mixture is not frivolous. While the oil is the flavor conductor of the other ingredients, the vinegar has the function of breaking the fat with its acidity, leaving the recipe balanced. In time, according to French manuals, the ideal formula is always four parts oil to one part vinegar or, in the citronette variation, lemon juice or sour fruit.
