1. Kefir butter
So that the butter does not become acidic, the little secret of the recipe is to “drain” the kefir yogurt. Therefore, it is necessary to wash the yogurt twice with ice water. After this process, add turmeric, olive oil (or coconut oil) and salt to taste. Mix well until it acquires a consistency similar to butter.
2. Kefir cream cheese
In a pot, place a funnel and, inside it, a coffee filter. Pour the kefir yogurt and let it filter in the fridge for approximately eight hours. After that time, the coffee filter will have concentrated the creamy yogurt. Transfer this yogurt to a bowl and season with olive oil, oregano and a pinch of salt. Mix well and it’s ready. Ah, the whey resulting from the filtration (which will be inside the pot) is quite nutritious and should not be discarded. One suggestion is to make juice, mixing this whey with some fruit.
3. Garlic sauce with kefir
Place garlic cloves, salt and pepper in a food processor. Gently process the garlic so that the garlic is in smaller pieces. Then add the kefir and a little more lemon juice to the food processor. Whisk a little more until the mixture is homogeneous. Add the oil and beat again, until the recipe has the consistency of mayonnaise. Good to eat with vegetable sticks and even with meats.
4. Fine Herb Pate with Kefir
In another very practical recipe, beat in the mixer (or in the processor) kefir yogurt, black pepper, salt and herbs. For this preparation, oregano, basil, rosemary and parsley were used. After you have processed all these ingredients, add the olive oil – it is added last to give it a texture. Just that and the pâté will be ready!
5. Pizza-flavored kefir ricotta
Pizza flavored kefir? That’s right! This is a recipe for those looking for creativity. In the kefir cream, several ingredients commonly found in Portuguese pizza were added: ham, tomato, olive, pea, oregano and tomato sauce. And if you want any more items, just use your imagination. To top it off, this pizza-flavored ricotta became tapioca filling.
6. Kefir cheese
To make the cheese, place the milk in a pan and bring to a boil. When the milk is already hot, add the kefir yogurt. Stir a lot. Turn off the heat and wait five minutes. Add salt to taste and continue stirring. After this process, it is necessary to remove the serum. If you don’t have a cheese maker, you can use a container, a sieve and a clean cloth – the whey will fall into the bowl and only the cheese will remain in the sieve. Let it cool down and put it in the fridge for 12 hours. After that time, it is already possible to unmold.
7. Kefir cream cheese on the endive boat
Here, we have a great entry option for a meeting at home. In a container, put the kefir drained for 48 hours, salt and pepper to taste. In another container, make a seasoned oil, adding parsley and salt to the oil. Pour this mixture into kefir. Add crackling and continue stirring. With the paste ready, stuff the endives and, to add more flavor, add Parmesan cheese on top.
8. Rice cake with kefir
The traditional rice ball will gain a special touch with kefir. With the rice ready, add salt, egg, grated Parmesan cheese, kefir yogurt and sliced bacon to the pan. Mix all the ingredients. Then add wheat flour to bind. Make balls with this dough and fry – but be careful, as the oil can splash when frying.
9. Kefir pizza

The ingredients are coconut oil, eggs, oat bran, grated parmesan cheese, toasted sesame and baking powder. Mix everything and then add the kefir yogurt.
