Soy protein is obtained from defatted soybeans through a process that combines high temperature and pressure. It is a protein of plant origin that is beneficial to health, nutritionally rich, low in fat, cholesterol and lactose, digestive – as it contains fiber, which has a neutral flavor that is easy to insert into various recipes.

This protein, which is easily found in health food stores, is considered an elixir of health by scientists, as it is a functional food, that is, it contains substances that bring health benefits, essential nutrients for a healthy life and contributes to the reduction of chronic diseases.

Clinical and epidemiological studies show that Asian populations, mainly China and Japan, who consume a diet rich in soy, have fewer symptoms of climacteric syndrome, suffer less from osteoporosis, cardiovascular diseases and some types of cancer. Because of this, several researches to know the mechanisms of action of the natural compounds found in soy were and are being carried out.

According to the conclusion of some studies already carried out, the healthy effects on the body occur thanks to substances such as saponin, which acts in the maintenance of the immune system and reduces the absorption of cholesterol in the intestine; phytosterol, which lowers cholesterol levels; and isoflavones, which have antioxidant effects and estrogenic activity, being a beneficial phytoestrogen in the fight against menopausal symptoms, premature aging and excess abdominal fat.

Soy Stroganoff

pasta ingredients

  • 500g of peeled and cooked manioc;
  • 1/2 can of light cream;
  • 1/2 cup of soy protein tea;
  • Salt to taste.

stuffing ingredients

  • 1 grated carrot;
  • 2 tablespoons of olive oil;
  • Green seasonings to taste (parsley, coriander, basil, thyme);
  • White pepper to taste;
  • Salt to taste;
  • 100 g buffalo mozzarella.

Preparation mode

  1. Squeeze the manioc, add the cream and the soy protein, which must be hydrated and prepared according to the manufacturer’s instructions, and mix well until it forms a puree. Add salt and set aside;
  2. Saute the carrots with the green seasonings in a pan with olive oil. Add salt and pepper. Let the broth dry well and let it cool;
  3. Line a refractory with the puree made from the manioc, milk cream and soy protein. Carefully place the carrot mixture with the green seasonings over the puree layer. Cover everything with buffalo mozzarella and take it to the oven for fixings.

Nut Cake with Soy Protein

pasta ingredients

  • 4 eggs;
  • 5 tablespoons of breadcrumbs;
  • 3 tablespoons of ground walnuts;
  • 3 tablespoons of textured dark soy protein;
  • 1 teaspoon of vanilla essence;
  • 1 tablespoon of sweetener for oven and stove;
  • 1 tablespoon of baking powder;
  • 1 tablespoon of vegetable oil to grease the pan.

stuffing ingredients

  • 1 packet of vanilla diet pudding prepared according to the manufacturer’s instructions.

syrup ingredients

  • 100 ml of filtered or mineral water;
  • 1 dessert spoon of sweetener for oven and stove;
  • 1 teaspoon of vanilla essence.

topping ingredients

  • 2 tablespoons of ground walnuts;
  • 2 tablespoons of unsweetened shredded coconut;
  • 2 tablespoons of dark soy protein.

Preparation mode

  1. Beat the egg whites, and add the yolks one by one;
  2. Turn off the mixer and add the vanilla, breadcrumbs, walnuts, soy protein, sweetener and finally the yeast;
  3. Unite the form with vegetable oil sprinkle the breadcrumbs;
  4. Bake in a preheated oven at 180 degrees for 25 minutes;
  5. Mix the syrup ingredients and bring to a boil;
  6. Cut the cake in half and wet it with the syrup after it has cooled down;
  7. Fill with the diet pudding, prepared according to the manufacturer’s instructions, and cover the pie with this pudding;
  8. Mix the walnuts, shredded coconut and soy protein and garnish the pie;
  9. Place in the fridge for 4 hours before serving.
