- 1 kg of raw chickpeas;
- Water for soaking and cooking;
- 3 tablespoons of vinegar.
How to make
Before starting the explanation, it is important to know that the process of soaking the chickpeas is sometimes essential, as it will rid the food of substances that usually hinder digestibility. Come on?
- Soak the beans in a large bowl of water at room temperature, covering an average of three fingers;
- Add 1 tablespoon of vinegar or lemon;
- After 4 hours change the water. Drain the beans well, cover them again with clean water and once again add 1 tablespoon of vinegar. This is a non-essential step, but it will help with the digestibility of the grain;
- Soak for 8 hours — ideally for more than 12 hours;
- Discard the water again;
- Cover the hydrated beans with a finger of water and take them to the fire until it boils. Also discard this water and clean the pan and beans well to remove the foam that forms;
- After that, test the texture of the grains;
- Return the beans to the pan and cover with three fingers of room temperature water;
- Put the pan on the fire and wait until it boils under pressure, test every 5 minutes so that the beans are “al dente”;
- Once they are cooked, transfer the beans to a container so that they cool well;
- When they are cool, store them for freezing. In the freezer they can stay up to 3 months, in the fridge for up to a week.
Make sure that if the day is hot, leave the chickpeas to soak in the fridge – to prevent the beans from fermenting.
