1. Vegan coffee cake in the skillet
Ingredients
- 10 tablespoons of millet or cornmeal flour
- 2 tablespoons 100% cocoa powder
- 2 ½ tablespoons brown sugar
- 1 teaspoon of psyllium
- 9 teaspoons of brewed coffee
- 1 teaspoon of olive oil
Preparation mode
- In a bowl, place the millet flour, cocoa powder and brown sugar. Mix these dry ingredients and set aside;
- In another container, place the psyllium and 3 tablespoons of brewed coffee. Stir well and set aside until it has a gel consistency;
- Take the dry mixture, make a hole in the middle and add the oil, the rest of the strained coffee and the gel formed with the psyllium;
- Stir until smooth and pour into a nonstick skillet;
- Over low heat, place the skillet with a lid for 15-16 minutes and it’s done! Now just transfer to a plate and enjoy!
2. Soluble coffee cake with chocolate
Ingredients
- 3 eggs
- 1 teacup of oil
- 1 ½ cups of refined sugar
- 1 cup of hot water
- 6 tablespoons of instant coffee
- ¼ cup 50% cocoa powdered chocolate
- 1 ½ tablespoon of baking powder
- 2 cups of wheat flour
Preparation mode
- In a bowl, beat the eggs with a whisk for 1 minute;
- Add the oil, sugar and stir for 2 minutes;
- Add the hot water, instant coffee, chocolate powder, baking powder and the first cup of sifted wheat flour;
- Mix everything with the fuê and add the second cup of sifted wheat flour;
- After stirring for about 1 minute, place on a greased and floured baking sheet;
- Bake in a preheated oven at 180 degrees for 45 minutes;

Ingredients
- 3 eggs
- 1 ½ cups of refined sugar
- 1 teacup of oil
- 3 tablespoons of chocolate
- 6 tablespoons of instant coffee
- 1 cup of hot water
- 2 ½ cups all-purpose flour
- 1 tablespoon of baking powder
Preparation mode
- With the help of a whisk, beat the eggs and then add the sugar and mix;
- Add the oil, the chocolate, the instant coffee and stir well;

- In a blender, place the eggs, oil, milk and sugar. Whisk until well blended;
- Add instant coffee and beat some more. After that, pour it into a bowl and add the sifted wheat flour alternating with the chocolate powder;
- Gently mix with a whisk and add the bicarbonate of soda, salt, cinnamon powder and baking powder;
- Pour the dough into a greased shape and take it to the oven preheated to 180º degrees for about 40 minutes;
